Easy Fresh Spinach Quiche Recipe
Easy recipe for low fat fresh spinach quiche. Can be cooked overnight and served as a fabulous brunch fare or a complete meal the next day. Could also be baked as a casserole.
Preparation: 10 minutes
Cooking: 65 minutes
4 servings
- 3 eggs
- 1 cup grated Cheddar cheese
- 1 tablespoon olive oil
- 1/2 cup chopped onion
- 1 chopped garlic clove
- 1/2 chopped red bell pepper
- 1 (9 inch) pie crust
- 3/4 cup chopped fresh spinach
- 1/2 lb crab flavored pollock
- 2/3 cup milk
- 1 tablespoon dill
- salt & pepper
- Bake the pie crust for 10 minutes at 350° F
- Heat oil in a large saucepan at medium heat
- Brown the onion, red bell pepper and garlic for 5 minutes
- Pour that mixture into your pie crust
- Spread the spinach and pollock over it
- Beat the eggs with the milk, cheese, dill, salt and pepper then pour over the spinach and pollock
- Bake at 350° F for 50 minutes
