Easy Fresh Spinach Quiche Recipe

Easy recipe for low fat fresh spinach quiche. Can be cooked overnight and served as a fabulous brunch fare or a complete meal the next day. Could also be baked as a casserole.

Preparation: 10 minutes

Cooking: 65 minutes

  • 3 eggs
  • 1 cup grated Cheddar cheese
  • 1 tablespoon olive oil
  • 1/2 cup chopped onion
  • 1 chopped garlic clove
  • 1/2 chopped red bell pepper
  • 1 (9 inch) pie crust
  • 3/4 cup chopped fresh spinach
  • 1/2 lb crab flavored pollock
  • 2/3 cup milk
  • 1 tablespoon dill
  • salt & pepper
  1. Bake the pie crust for 10 minutes at 350° F
  2. Heat oil in a large saucepan at medium heat
  3. Brown the onion, red bell pepper and garlic for 5 minutes
  4. Pour that mixture into your pie crust
  5. Spread the spinach and pollock over it
  6. Beat the eggs with the milk, cheese, dill, salt and pepper then pour over the spinach and pollock
  7. Bake at 350° F for 50 minutes
