Easy Beef Vegetable Barley Soup Recipe

A delicious low fat beef and barley soup recipe. Perfect for a slow cooker (or crock pot), this classic recipe can be made with very little effort. (You can replace cubed beef with ground beef)

  • 3/4 lb cubed beef (small cubes)
  • 1 can ground tomatoes (or diced)
  • 2 stalks celery, diced
  • 3 carrots, diced
  • 3 chopped garlic cloves
  • 2 tablespoons garlic salt
  • 1 teaspoon Thyme
  • 1 teaspoon Oregano
  • 2 tablespoons Ketchup
  • 7 cups beef bouillon
  • 1/2 cup barley
  • 1 cup frozen peas
  • 1 cup diced potatoes
  • salt & pepper
  1. Mix all the ingredients in a large pot and stir gently
  2. Bring to a boil then reduce heat and simmer, covered, for 1 ½ hour or until your ingredients attain desired consistency
