Easy Beef Vegetable Barley Soup Recipe
A delicious low fat beef and barley soup recipe. Perfect for a slow cooker (or crock pot), this classic recipe can be made with very little effort. (You can replace cubed beef with ground beef)

- 3/4 lb cubed beef (small cubes)
- 1 can ground tomatoes (or diced)
- 2 stalks celery, diced
- 3 carrots, diced
- 3 chopped garlic cloves
- 2 tablespoons garlic salt
- 1 teaspoon Thyme
- 1 teaspoon Oregano
- 2 tablespoons Ketchup
- 7 cups beef bouillon
- 1/2 cup barley
- 1 cup frozen peas
- 1 cup diced potatoes
- salt & pepper
- Mix all the ingredients in a large pot and stir gently
- Bring to a boil then reduce heat and simmer, covered, for 1 ½ hour or until your ingredients attain desired consistency
