Breakfast Casserole With Eggs And Bacon Recipe
A simple breakfast casserole recipe made of hash browns, bacon, eggs and cheese. Can be prepared overnight and baked as a brunch fare or breakfast lunch the next day.

- 1 (32 ounce) package frozen cubed hash brown potatoes, thawed
- 1 pound chopped bacon
- 8 eggs
- 1 cup chopped onion
- 2 cups shredded cheddar cheese
- 1 tablespoon black pepper
- 1/2 cup milk
- Preheat oven to 350° F
- Cook the bacon and onion in a frying pan for 5-6 minutes.
- In a large bowl, combine the onion, bacon, hash browns, 3/4 cup cheese, eggs, milk, black pepper and stir.
- Spoon into a greased 13x9x2 in. baking dish.
- Sprinkle the remaining cheese over the mixture.
- Bake uncovered for 45 minutes.
