Breakfast Casserole With Eggs And Bacon Recipe

A simple breakfast casserole recipe made of hash browns, bacon, eggs and cheese. Can be prepared overnight and baked as a brunch fare or breakfast lunch the next day.

  • 1 (32 ounce) package frozen cubed hash brown potatoes, thawed
  • 1 pound chopped bacon
  • 8 eggs
  • 1 cup chopped onion
  • 2 cups shredded cheddar cheese
  • 1 tablespoon black pepper
  • 1/2 cup milk
  1. Preheat oven to 350° F
  2. Cook the bacon and onion in a frying pan for 5-6 minutes.
  3. In a large bowl, combine the onion, bacon, hash browns, 3/4 cup cheese, eggs, milk, black pepper and stir.
  4. Spoon into a greased 13x9x2 in. baking dish.
  5. Sprinkle the remaining cheese over the mixture.
  6. Bake uncovered for 45 minutes.
