Broccoli Carrot Soup Recipe

An easy broccoli & carrot cream soup recipe. You may add some cauliflower or cheddar cheese for a different recipe. For a more tasty soup add some white wine and/or swiss cheese.

  • 2 cups broccoli
  • 2 cups carrot, peeled & sliced
  • 1 pear, peeled & sliced
  • 5 cups chicken broth
  • 2 garlic cloves, minced
  • 1 teaspoon oregano
  • 1 teaspoon basil
  • Salt & Pepper
  • 1 tablespoon olive oil
  1. In a large cooking pot, heat olive oil over medium heat, and cook the vegetables for 6-7 minutes.
  2. Add the rest of the ingredients and bring to a boil.
  3. Reduce heat and simmer for 20-25 minutes, or until vegetables are well cooked.
  4. Process into a blender until smooth.
  5. Pour back into the cooking pot and serve.
