Broccoli Leek Soup Recipe
A simple and delicious leek and broccoli cream. Add some fresh cream or plain yogurt to this easy comforting soup for an even better taste. For a different recipe, add some cheddar or swiss cheese and a bit of white wine.

6-8 servings
- 1 bunch broccoli, chopped
- 2 leeks, white to light green, chopped
- 1 potato, peeled & diced
- 2 garlic cloves, minced
- 4 cups chicken bouillon
- 1 teaspoon basil
- 1 teaspoon oregano
- Salt & Pepper
- 1 tablespoon olive oil
- In a large cooking pot, heat olive oil over medium heat, and cook the vegetables for 6-7 minutes.
- Add the rest of the ingredients and bring to a boil.
- Reduce heat and simmer for 20-25 minutes, or until vegetables are well cooked.
- Process into a blender until smooth.
- Pour back into the cooking pot and serve.
