Broccoli Raisin Salad with Cauliflower

An easy, healthy and nutritious summer salad. You may add sliced chicken breast or boiled egg for a protein rich salad. Serve either as an appetizer, sidedish or complete meal. Use splenda for a low carb recipe.

Preparation: 10 minutes

No cooking required.

  • 4 cups chopped broccoli
  • 1 cup cauliflower
  • 1/2 cup sliced red onion
  • 1 1/2 cup raisins
  • 2 sliced garlic cloves
  • 1 cup diced feta cheese
  • 4-5 slices bacon, cooked and crumbled, or 1/3 cup simili bacon
  • 1/4 cup roasted pine nuts
  • 1 1/2 cup mayonnaise
  • 2 tablespoons lemon juice
  • 3 tablespoons balsamic vinegar
  • 1/4 cup white sugar
  • 2 tablespoons dijon mustard
  1. Mix the ingredients in a large salad bowl.
