Carrot And Courgette Soup Recipe
A delicious carrot and courgette cream soup. You may pour in some light cream, plain yogurt or milk. Add some spinach leaves or cheddar cheese for a tastier soup.

6-8 servings
- 2 1/2 cups sliced carrot
- 1 1/2 cup sliced courgette
- 1 cup sliced potato
- 4 cups vegetable stock
- 2 tablespoons butter
- 1 onion, chopped
- 1 small pear, diced
- Salt & Pepper
- In a large cooking pot, heat butter over medium heat, and cook the vegetables & pear for 6-8 minutes.
- Add stock, salt & pepper to taste, and bring to a boil.
- Simmer for 20-25 minutes.
- Puree in a blender until smooth.
