Carrot & Coriander Soup Recipe

An easy homemade coriander & carrot soup recipe. Use 1% milk a bit of fat free or low fat plain yogurt for a low calorie soup recipe. Serve with a pesto chicken sandwich for an amazing dinner!

  • 1 pound carrot
  • 1 1/2 teaspoon ground coriander
  • 1 medium onion, diced
  • 4 cups chicken bouillon
  • 4 tablespoons fresh coriander, chopped
  • 1/4 cup cream
  • 1 garlic clove, minced
  • Salt & Pepper
  • 1 tablespoon olive oil
  1. In a large saucepan, heat the oil over medium heat and cook the carrot, ground coriander, onion and garlic for 5-6 minutes then add the chicken bouillon and the rest of the seasoning. Reduce heat and simmer for 20 minutes.
  2. When vegetables are tender, pour the content of the saucepan in a blender, add the cream and process until smooth.
  3. Pour back into the saucepan and serve warm.
