Carrot & Coriander Soup Recipe
An easy homemade coriander & carrot soup recipe. Use 1% milk a bit of fat free or low fat plain yogurt for a low calorie soup recipe. Serve with a pesto chicken sandwich for an amazing dinner!

6-8 servings
- 1 pound carrot
- 1 1/2 teaspoon ground coriander
- 1 medium onion, diced
- 4 cups chicken bouillon
- 4 tablespoons fresh coriander, chopped
- 1/4 cup cream
- 1 garlic clove, minced
- Salt & Pepper
- 1 tablespoon olive oil
- In a large saucepan, heat the oil over medium heat and cook the carrot, ground coriander, onion and garlic for 5-6 minutes then add the chicken bouillon and the rest of the seasoning. Reduce heat and simmer for 20 minutes.
- When vegetables are tender, pour the content of the saucepan in a blender, add the cream and process until smooth.
- Pour back into the saucepan and serve warm.
