Carrot Dill Soup Recipe
An easy and flavorsome carrot & dill soup recipe. Add some fresh cream or some low fat plain yogurt for a smoother texture. This is a delicious vegetarian carrot soup.

6-8 servings
- 1 pound carrot, peeled & sliced
- 4-5 tablespoons fresh dill, chopped
- 1 medium potato
- 1 medium onion
- 5 cups chicken bouillon
- 1 garlic clove, minced
- 1 tablespoon olive oil
- salt & pepper
- In a large cooking pot, heat olive oil over medium heat and cook the vegetables for 5-6 minutes.
- Add the rest of the ingredients and bring to a boil.
- Reduce heat and simmer for 20 minutes or until vegetables are well cooked.
- Pour into a blender and process until smooth.
- Transfer back to the cooking pot.
- Serve warm.
