Carrot Dill Soup Recipe

An easy and flavorsome carrot & dill soup recipe. Add some fresh cream or some low fat plain yogurt for a smoother texture. This is a delicious vegetarian carrot soup.

  • 1 pound carrot, peeled & sliced
  • 4-5 tablespoons fresh dill, chopped
  • 1 medium potato
  • 1 medium onion
  • 5 cups chicken bouillon
  • 1 garlic clove, minced
  • 1 tablespoon olive oil
  • salt & pepper
  1. In a large cooking pot, heat olive oil over medium heat and cook the vegetables for 5-6 minutes.
  2. Add the rest of the ingredients and bring to a boil.
  3. Reduce heat and simmer for 20 minutes or until vegetables are well cooked.
  4. Pour into a blender and process until smooth.
  5. Transfer back to the cooking pot.
  6. Serve warm.
