Carrot Ginger Soup Recipe
An easy and comforting carrot & ginger soup recipe. This flavorsome carrot cream has an oriental touch you can't resist. You may add some fresh cream, or yogurt for a low fat recipe. It is delicious with a chicken sandwich.

6-8 servings
- 1 pound carrot, peeled & sliced
- 1 medium onion, chopped
- 1 small potato, diced
- 2 tablespoons shredded fresh ginger
- 1 tablespoon lemon juice
- 1/2 teaspoon lemon zest
- 4 cups chicken broth
- 1 cup milk
- 1 minced garlic clove
- Salt & Pepper
- In a cooking pot, heat 1 tablespoon olive oil over medium heat, then add carrot, potato, garlic and onion. Cook for 6-8 minutes.
- Add the rest of the ingredients and bring to a boil, then reduce heat, cover and simmer for 20-25 minutes or until the vegetables are well cooked.
- Pour into a blender and process until smooth.
- Pour back into the cooking pot.
- Serve warm.
