Carrot Ginger Soup Recipe

An easy and comforting carrot & ginger soup recipe. This flavorsome carrot cream has an oriental touch you can't resist. You may add some fresh cream, or yogurt for a low fat recipe. It is delicious with a chicken sandwich.

  • 1 pound carrot, peeled & sliced
  • 1 medium onion, chopped
  • 1 small potato, diced
  • 2 tablespoons shredded fresh ginger
  • 1 tablespoon lemon juice
  • 1/2 teaspoon lemon zest
  • 4 cups chicken broth
  • 1 cup milk
  • 1 minced garlic clove
  • Salt & Pepper
  1. In a cooking pot, heat 1 tablespoon olive oil over medium heat, then add carrot, potato, garlic and onion. Cook for 6-8 minutes.
  2. Add the rest of the ingredients and bring to a boil, then reduce heat, cover and simmer for 20-25 minutes or until the vegetables are well cooked.
  3. Pour into a blender and process until smooth.
  4. Pour back into the cooking pot.
  5. Serve warm.
