Cauliflower And Stilton Soup Recipe

A delightful cauliflower & stilton cheese cream soup. You may replace milk with light cream or some plain yogurt for a different texture and taste.

Preparation: 10 minutes

Cooking: 30 minutes

  • 1 pound cauliflower florets
  • 1/4 cup onion, diced
  • 1 leek (white to light green part), chopped
  • 1 cup carrot, diced
  • 1/4 cup green onion, chopped
  • 1/3 cup butter
  • 3 1/2 cups vegetable stock
  • 2 cups milk
  • 1 1/2 cup stilton cheese
  1. In a large cooking pot, heat butter over medium heat, and cook the vegetables for 6-8 minutes.
  2. Add stock, cheese, salt & pepper to taste, and bring to a boil.
  3. Simmer for 20-25 minutes.
  4. Add milk, process in a blender and serve.
