Cauliflower And Stilton Soup Recipe
A delightful cauliflower & stilton cheese cream soup. You may replace milk with light cream or some plain yogurt for a different texture and taste.

7-9 servings
- 1 pound cauliflower florets
- 1/4 cup onion, diced
- 1 leek (white to light green part), chopped
- 1 cup carrot, diced
- 1/4 cup green onion, chopped
- 1/3 cup butter
- 3 1/2 cups vegetable stock
- 2 cups milk
- 1 1/2 cup stilton cheese
- In a large cooking pot, heat butter over medium heat, and cook the vegetables for 6-8 minutes.
- Add stock, cheese, salt & pepper to taste, and bring to a boil.
- Simmer for 20-25 minutes.
- Add milk, process in a blender and serve.
