Chicken Chow Mein Stir Fry
A delicious recipe for chicken chow mein. This Thai style stir fry made of chicken and vegetables is healthy and tasty. You can use tofu instead of chicken. One of the best chinese chicken recipes.

- 3 cups crude chicken, sliced
- 1/2 cup green bell pepper, diced
- 1/2 cup celery, diced
- 1/2 cup onion, diced
- 1 cup mushrooms, cut in half
- 2 1/2 chinese lettuce, sliced in 1 inch parts
- 1 cup chicken broth
- 2 tablespoons soy sauce
- 2 tablespoons olive oil
- 1 tablespoon corn starch mixed with equal quantity of cold water
- In a large skillet, heat the oil and cook the chicken over very high heat for 5-6 minutes then set aside. Repeat process with vegetables. Then add the rest of the ingredients to your skillet except for the cornstarch then cook for 5 minutes.
- Add the corn starch and thicken the sauce for 1-2 minutes.
