Chicken Potato Salad Recipe
A quick and simple potato salad recipe with sliced chicken breast. You will love this version of the traditional potato salad recipe. Could be served as a side dish as well as a complete meal.

- 2 sliced chicken breasts
- 5 cups diced potatoes, boiled for 15 to 20 minutes
- 1 3/4 cup light mayonnaise
- 2 tablespoons dijon mustard
- 2 hard boiled eggs, chopped
- 2/3 cup chopped green onion
- 1/4 cup sweet dill pickles, chopped
- 1/4 cup green olives, chopped
- Mix all the ingredients, except the potatoes, together.
- Then mix in the potatoes and stir gently.
- Cool in the refrigerator for a couple hours before serving.
