Chicken Potato Salad Recipe

A quick and simple potato salad recipe with sliced chicken breast. You will love this version of the traditional potato salad recipe. Could be served as a side dish as well as a complete meal.

  • 2 sliced chicken breasts
  • 5 cups diced potatoes, boiled for 15 to 20 minutes
  • 1 3/4 cup light mayonnaise
  • 2 tablespoons dijon mustard
  • 2 hard boiled eggs, chopped
  • 2/3 cup chopped green onion
  • 1/4 cup sweet dill pickles, chopped
  • 1/4 cup green olives, chopped
  1. Mix all the ingredients, except the potatoes, together.
  2. Then mix in the potatoes and stir gently.
  3. Cool in the refrigerator for a couple hours before serving.
