Cold Asparagus Salad Recipe

A healthy asparagus and potato summer salad recipe. Add some chicken or sliced boiled egg for a protein rich recipe. Add some shredded carrot for a different taste.

No cooking required.

  • 4 cups sliced asparagus (cooked 3 minutes in boiling water)
  • 1 cup cooked potato, diced
  • 3 minced garlic cloves
  • 1/2 cup sliced red onion
  • 1/2 cup shredded parmesan cheese
  • 2 tablespoons dijon mustard
  • 3 tablespoons oilve oil
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons lemon juice
  • 1/4 cup white sugar
  • 3 tablespoons raisins
  1. Mix ingredients in a large salad bowl. Refrigerate 3 hours before serving.
