Cranberry Chicken Salad Recipe

An easy and healthy salad you may eat either as an appetizer or as a complete meal. Use fat free or low fat yogurt. You may replace honey with splenda for a low carb recipe.

  • 2 sliced chicken breasts
  • 1 cup cranberries
  • 1/2 cup mashed raspberries
  • 1 cup plain yogurt
  • 3 cups iceberg lettuce
  • 1 tablespoon honey
  • 1/4 cup sliced red onion
  • 1/4 cup shredded radish
  • 1/4 cup shredded carrot
  • 2 tablespoons raisins
  • 1 tablespoon cider vinegar
  • Salt & Pepper
  1. Mix ingredients in a large salad bowl.
