Cream Of Broccoli & Cheese Soup Recipe
An easy and nutritious broccoli cream soup with cheddar cheese. You could replace broccoli with cauliflower or spinach. Use 1% milk and light cheese for a low fat recipe.

6-8 servings
- 4 1/2 cups broccoli
- 1 3/4 cheddar cheese
- 2 1/2 cups milk
- 2 1/2 cups chicken broth
- 3 peeled garlic cloves
- 1 onion, diced
- 1 medium potato
- Salt & Pepper
- In a large sauce pan bring some water to a boil, reduce heat then cook the potato in simmering water for 10 minutes then add onion and broccoli. Cook for 10 more minutes.
- Drain water and place the vegetables in a blender and process until smooth. Add the rest of the ingredients and process again.
