Cream Of Broccoli & Cheese Soup Recipe

An easy and nutritious broccoli cream soup with cheddar cheese. You could replace broccoli with cauliflower or spinach. Use 1% milk and light cheese for a low fat recipe.

  • 4 1/2 cups broccoli
  • 1 3/4 cheddar cheese
  • 2 1/2 cups milk
  • 2 1/2 cups chicken broth
  • 3 peeled garlic cloves
  • 1 onion, diced
  • 1 medium potato
  • Salt & Pepper
  1. In a large sauce pan bring some water to a boil, reduce heat then cook the potato in simmering water for 10 minutes then add onion and broccoli. Cook for 10 more minutes.
  2. Drain water and place the vegetables in a blender and process until smooth. Add the rest of the ingredients and process again.
