Easy Cream of Carrots Recipe
Pears and ground cherries give this healthy and nutritious cream of carrots a truly unique taste! Use milk for a healthier version. This is a low carb recipe.

- 4 1/2 cups sliced carrot
- 1 cup chopped onion
- 1 chopped pear
- 2 cups diced potatoes
- 1 cup chopped ground cherries (not cherries, but « ground cherries »)
- 1 tablespoon basil
- 1 tablespoon savory
- 1 tablespoon tarragon
- 6 cups chicken broth
- 3 tablespoons flour
- 2 cups Milk or Cream
- Cook the carrot and onion in a large sauce pan at medium heat for 5 minutes
- Add the rest of the ingredients except the milk or cream and bring to a boil
- Reduce heat and simmer, covered, until carrots are tender. Around 45 minutes
- Pour the mixture in a blender and puree
- Put the vegetable mixture back in the saucepan and pour the milk/cream
- Stir well and heat until desired temperature is reached
