Easy Cream of Carrots Recipe

Pears and ground cherries give this healthy and nutritious cream of carrots a truly unique taste! Use milk for a healthier version. This is a low carb recipe.

  • 4 1/2 cups sliced carrot
  • 1 cup chopped onion
  • 1 chopped pear
  • 2 cups diced potatoes
  • 1 cup chopped ground cherries (not cherries, but « ground cherries »)
  • 1 tablespoon basil
  • 1 tablespoon savory
  • 1 tablespoon tarragon
  • 6 cups chicken broth
  • 3 tablespoons flour
  • 2 cups Milk or Cream
  1. Cook the carrot and onion in a large sauce pan at medium heat for 5 minutes
  2. Add the rest of the ingredients except the milk or cream and bring to a boil
  3. Reduce heat and simmer, covered, until carrots are tender. Around 45 minutes
  4. Pour the mixture in a blender and puree
  5. Put the vegetable mixture back in the saucepan and pour the milk/cream
  6. Stir well and heat until desired temperature is reached
