Easy Date Oatmeal Squares Recipe

Easy and delicious. A chewy, date filled oatmeal bar. Top with heavy cream. Could be eaten as a dessert or a nutritious snack.

  • 4 cups rolled oats
  • 2 cups flour
  • 2 cups brown sugar
  • 2 lb pitted dates, diced
  • 1 cup water
  • 2 cup softened butter
  • 3/4 teaspoon baking soda
  1. Preheat oven at 350° F
  2. In a large bowl, combine the flour, rolled oats, baking soda, butter and 1 cup brown sugar. Stir thoroughly. Press half of the mixture into the bottom of a square baking pan.
  3. Combine the dates, 1 cup brown sugar, and water in a medium sauce pan, bring to a boil and stir until thickened. Spread the date filling over the base then pour the rest of the oatmeal mix equally and press with a fork.
  4. Bake for 15-20 minutes or until top is lightly toasted.
