Easy & Healthy Orange Bran Muffins Recipe
An easy and healthy bran muffin recipe. Moist, low in fat, low carb, and very tasty. Use whole wheat flour and olive oil for a healthier version of those decadent muffins.

- 1 orange, washed, peeled and cut (keep the peel)
- 3/4 cup orange juice
- 1/4 cup margarine
- 1/4 cup vanilla yogurt
- 1 cup oat bran
- 1 1/2 cup flour
- 1/2 cup white sugar
- 2 eggs
- 1 cup cranberries
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- Put orange and its peel in a blender and puree.
- Combine flour, baking powder, baking soda, oat bran, white sugar and salt in a large bowl. Add the eggs, margarine and yogurt then stir.
- Mix in the rest of the ingredients and stir.
- Spoon the mixture into 12 muffin cups.
- Bake at 350 degrees F for 25 minutes, or until a fork inserted into a muffin comes out clean.
