Easy & Healthy Orange Bran Muffins Recipe

An easy and healthy bran muffin recipe. Moist, low in fat, low carb, and very tasty. Use whole wheat flour and olive oil for a healthier version of those decadent muffins.

  • 1 orange, washed, peeled and cut (keep the peel)
  • 3/4 cup orange juice
  • 1/4 cup margarine
  • 1/4 cup vanilla yogurt
  • 1 cup oat bran
  • 1 1/2 cup flour
  • 1/2 cup white sugar
  • 2 eggs
  • 1 cup cranberries
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  1. Put orange and its peel in a blender and puree.
  2. Combine flour, baking powder, baking soda, oat bran, white sugar and salt in a large bowl. Add the eggs, margarine and yogurt then stir.
  3. Mix in the rest of the ingredients and stir.
  4. Spoon the mixture into 12 muffin cups.
  5. Bake at 350 degrees F for 25 minutes, or until a fork inserted into a muffin comes out clean.
