Easy Lemon Blueberry Muffins Recipe
One of the best muffin recipes I've ever baked. You could use whole wheat flour, and olive oil instead of butter for a healthier and low fat recipe. Replace sugar with splenda for a low carb muffin recipe.

- 1 cup oatmeal
- 1 1/2 cup all-purpose flour
- 1 cup sugar
- 1 tablespoon baking powder
- 1 teaspoon salt
- Zest of 1 lemon
- 1 1/2 cup blueberries
- 1/2 cup smooth butter
- 3/4 cup milk
- 1 egg
- 1 tablespoon vanilla extract
- Combine all the dry ingredients in a large bowl and stir.
- Add the rest of the ingredients except blueberries and str thoroughly.
- Add the blueberries and mix gently.
- Spoon the mixture into 12 muffin cups.
- Bake at 350 degrees F for 25-30 minutes.
