Easy Lemon Blueberry Muffins Recipe

One of the best muffin recipes I've ever baked. You could use whole wheat flour, and olive oil instead of butter for a healthier and low fat recipe. Replace sugar with splenda for a low carb muffin recipe.

  • 1 cup oatmeal
  • 1 1/2 cup all-purpose flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • Zest of 1 lemon
  • 1 1/2 cup blueberries
  • 1/2 cup smooth butter
  • 3/4 cup milk
  • 1 egg
  • 1 tablespoon vanilla extract
  1. Combine all the dry ingredients in a large bowl and stir.
  2. Add the rest of the ingredients except blueberries and str thoroughly.
  3. Add the blueberries and mix gently.
  4. Spoon the mixture into 12 muffin cups.
  5. Bake at 350 degrees F for 25-30 minutes.
