Easy Mexican Omelet With Cheese Recipe
Beaten eggs with salsa and cheese. Can be served as a healthy brunch fare or a complete breakfast. This is a low carb and low fat omelet recipe. Add it to your brunch menu recipes book!

4 servings
- 8 eggs
- 1/4 cup milk
- 1/2 teaspoon chili powder
- 1 cup grated cheddar cheese
- 1/2 cup medium or hot salsa
- 2 green onions, chopped
- 1 teaspoon basil
- Beat all the ingredients together.
- Pour in a large skillet, cook for 7-8 minutes on each side.
- Optional: You can sprinkle some mozzarella cheese (or parmesan) and bake at 450 degrees F for 6-8 minutes.
