Easy Mexican Omelet With Cheese Recipe

Beaten eggs with salsa and cheese. Can be served as a healthy brunch fare or a complete breakfast. This is a low carb and low fat omelet recipe. Add it to your brunch menu recipes book!

  • 8 eggs
  • 1/4 cup milk
  • 1/2 teaspoon chili powder
  • 1 cup grated cheddar cheese
  • 1/2 cup medium or hot salsa
  • 2 green onions, chopped
  • 1 teaspoon basil
  1. Beat all the ingredients together.
  2. Pour in a large skillet, cook for 7-8 minutes on each side.
  3. Optional: You can sprinkle some mozzarella cheese (or parmesan) and bake at 450 degrees F for 6-8 minutes.
