Easy Spanish Potato Omelet Recipe

A simple & hearty omelet with potato & onion. Cook this spanish recipe to impress your relatives... A taste of mexico in your kitchen for breakfast! (Be careful flipping the omelet in your pan)

  • 7 eggs
  • 3/4 pound potatoes, thin slices
  • 2 onions, thinly sliced
  • 1/4 cup olive oil
  • Salt & Pepper to taste
  • 2 garlic cloves, crushed
  1. In a large frying pan, fry the potatoes in olive oil over high heat until golden brown. Sprinkle with salt and pepper to taste. Stir in the onions and stir for 5-6 minutes.
  2. Meanwhile, beat the eggs with salt, pepper and garlic. Pour the eggs in the frying pan and stir gently to mix the ingredients.
  3. Cook 15 minutes on each side.
