Easy Spanish Potato Omelet Recipe

- 7 eggs
- 3/4 pound potatoes, thin slices
- 2 onions, thinly sliced
- 1/4 cup olive oil
- Salt & Pepper to taste
- 2 garlic cloves, crushed
- In a large frying pan, fry the potatoes in olive oil over high heat until golden brown. Sprinkle with salt and pepper to taste. Stir in the onions and stir for 5-6 minutes.
- Meanwhile, beat the eggs with salt, pepper and garlic. Pour the eggs in the frying pan and stir gently to mix the ingredients.
- Cook 15 minutes on each side.
