Guiness Beef Stew Recipe
A delightful beef stew with a strong beer taste. This Irish recipe is perfect for the cold winter days. Prunes and Stout beer give a very unique taste to this meal. Serve with your favorite potatoes.

- 2 pounds beef cubes
- 1 small guiness stout
- 1 cup pitted prunes
- 1 cup sliced carrot
- 1 large onion, diced
- 2 tablespoons flour
- 3 cups beef stock
- 1/4 teaspoon thyme
- 2 bay leaves
- 1 tablespoon chopped parsley
- Fresh ground black pepper to taste
- 2 tablespoons olive oil
- In a large cooking pot, heat the oil and cook the meat with the bay leaves over medium heat for 10 minutes constantly stirring.
- Add the vegetables and cook 10 more minutes.
- Add the rest of the ingredients and cook for 2 hours at 350F in oven.
