Guiness Beef Stew Recipe

A delightful beef stew with a strong beer taste. This Irish recipe is perfect for the cold winter days. Prunes and Stout beer give a very unique taste to this meal. Serve with your favorite potatoes.

  • 2 pounds beef cubes
  • 1 small guiness stout
  • 1 cup pitted prunes
  • 1 cup sliced carrot
  • 1 large onion, diced
  • 2 tablespoons flour
  • 3 cups beef stock
  • 1/4 teaspoon thyme
  • 2 bay leaves
  • 1 tablespoon chopped parsley
  • Fresh ground black pepper to taste
  • 2 tablespoons olive oil
  1. In a large cooking pot, heat the oil and cook the meat with the bay leaves over medium heat for 10 minutes constantly stirring.
  2. Add the vegetables and cook 10 more minutes.
  3. Add the rest of the ingredients and cook for 2 hours at 350F in oven.
