A very simple blueberry oatmeal muffins recipe. Those healthy muffins are, hutritious, low fat and sugar free. You won't resist to their taste and moist texture!

  • 3 cups all purpose flour
  • 2 cups splenda
  • 1 cup oatmeal
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 2 eggs, beaten
  • 1 teaspoon salt
  • 3/4 cup milk
  • 1/2 cup vanilla yogurt
  • 1 cup mashed up blueberries
  • 1 1/2 cup blueberries
  • 1/4 cup olive oil
  • 1 cup chopped walnuts
  1. Preheat oven to 350 degrees F.
  2. In a large bowl, mix the flour, baking soda, baking powder, sugar and salt. Mix in the eggs, olive oil and yogurt. Add the rest of the ingredients and stir.
  3. Spoon the muffin mixture into 24 muffin cups.
  4. Bake for 25-30 minutes or until a fork inserted into a muffin comes out clean.
