Easy & Healthy Pineapple Carrot Muffins Recipe

Moist and delicious, you will love the smell and taste. Use whole wheat flour, splenda and olive oil for a healthier version of those low fat muffins.

  • 1 1/2 cup flour
  • 1/2 cup oatmeal
  • 1 cup white sugar
  • 2 eggs
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 3/4 cup shredded carrot
  • 3/4 cup crushed pineapple, drained
  • 1/2 cup olive oil
  • 1/4 cup applesauce
  1. Preheat oven to 350 degrees F.
  2. Combine flour, baking powder, baking soda, oatmeal, white sugar, cinnamon, nutmeg and salt in a large bowl. Add the eggs, margarine and applesauce then stir.
  3. Mix in the rest of the ingredients and stir.
  4. Spoon the mixture into 12 muffin cups.
  5. Bake for 25 minutes, or until a fork inserted in a muffin comes out clean.
