Easy & Healthy Pineapple Carrot Muffins Recipe
Moist and delicious, you will love the smell and taste. Use whole wheat flour, splenda and olive oil for a healthier version of those low fat muffins.

- 1 1/2 cup flour
- 1/2 cup oatmeal
- 1 cup white sugar
- 2 eggs
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon salt
- 3/4 cup shredded carrot
- 3/4 cup crushed pineapple, drained
- 1/2 cup olive oil
- 1/4 cup applesauce
- Preheat oven to 350 degrees F.
- Combine flour, baking powder, baking soda, oatmeal, white sugar, cinnamon, nutmeg and salt in a large bowl. Add the eggs, margarine and applesauce then stir.
- Mix in the rest of the ingredients and stir.
- Spoon the mixture into 12 muffin cups.
- Bake for 25 minutes, or until a fork inserted in a muffin comes out clean.
