Healthy Vegan Banana Oatmeal Cookies Recipe
A very healthy, vegan version or the traditional banana oatmeal cookies recipe. The use of applesauce instead of butter also makes this a fat free recipe. Use splenda instead of sugar for a low carb recipe.

About 25 cookies
- 2 ripe bananas, peeled and mashed
- 1/2 cup applesauce
- 1 egg
- 2 cups oatmeal
- 3/4 cup flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 2 tablespoons vanilla extract
- 1/2 teaspoon salt
- 1/2 cup coconut
- Preheat oven to 350 F
- In a large bowl, mix banana with egg, applesauce, sugar and flour.
- Add the rest of the dry ingredients (except coconut) slowly while stirring constantly.
- Mix the coconut with the cookie dough.
- Spoon the cookie mixture onto a baking sheet and bake for 10-15 minutes.
