Healthy Vegan Banana Oatmeal Cookies Recipe

A very healthy, vegan version or the traditional banana oatmeal cookies recipe. The use of applesauce instead of butter also makes this a fat free recipe. Use splenda instead of sugar for a low carb recipe.

  • 2 ripe bananas, peeled and mashed
  • 1/2 cup applesauce
  • 1 egg
  • 2 cups oatmeal
  • 3/4 cup flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 2 tablespoons vanilla extract
  • 1/2 teaspoon salt
  • 1/2 cup coconut
  1. Preheat oven to 350 F
  2. In a large bowl, mix banana with egg, applesauce, sugar and flour.
  3. Add the rest of the dry ingredients (except coconut) slowly while stirring constantly.
  4. Mix the coconut with the cookie dough.
  5. Spoon the cookie mixture onto a baking sheet and bake for 10-15 minutes.
