Homemade Chewy Coconut Cookies Recipe
A very simple cookie recipe for christmas. Add peanut butter, maple or chocolate syrup for a different taste. Replace sugar with splenda for a low carb, healthy recipe. Replace butter with applesauce for a fat free recipe.
Preparation: 20 minutes
Cooking: 10-15 minutes
About 30 cookies
- 1 1/2 cup shredded coconut
- 1 cup flour
- 1 cup brown sugar
- 2 eggs
- 2/3 cup salted butter, melted
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1 tablespoon grated lemon rind
- Preheat oven to 350 F
- Combine dry ingredients, except coconut, with butter in a large bowl and stir. Then mix in the eggs.
- Add the rest of the ingredients and stir.
- Spoon onto a greased baking sheet. Bake for 10-15 minutes.
