Homemade Coconut Macaroon Cookies Recipe
A very simple cookie recipe for holidays. You could add peanut butter or chocolate syrup to this recipe for a different taste. Use splenda instead of sugar for a low carb, healthy recipe. Those are perfect to eat with a cup of coffee.

About 20 cookies
- 2 cups shredded coconut
- 1/4 cup flour
- 1/2 cup brown sugar
- 1 teaspoon vanilla extract
- 2 egg whites
- 1 tablespoon grated lemon rind
- Combine dry ingredients in a large bowl.
- Add the rest of the ingredients slowly and stir.
- Spoon onto a greased baking sheet and bake for 20 minutes at 350 F.
