Homemade Coconut Macaroon Cookies Recipe

A very simple cookie recipe for holidays. You could add peanut butter or chocolate syrup to this recipe for a different taste. Use splenda instead of sugar for a low carb, healthy recipe. Those are perfect to eat with a cup of coffee.

Preparation: 15 minutes

Cooking: 20 minutes

  • 2 cups shredded coconut
  • 1/4 cup flour
  • 1/2 cup brown sugar
  • 1 teaspoon vanilla extract
  • 2 egg whites
  • 1 tablespoon grated lemon rind
  1. Combine dry ingredients in a large bowl.
  2. Add the rest of the ingredients slowly and stir.
  3. Spoon onto a greased baking sheet and bake for 20 minutes at 350 F.
