Homemade Danish Butter Cookies Recipe
This is a homemade version of the traditional danish butter cookies. While you may find it a bit different, they are very similar. Use splenda for a low carb, more healthy recipe. Could be done with margarine, but not as good.

About 24 cookies
- 2 cups unsalted butted, softened
- 2 1/2 cups sugar
- 4 cups flour
- 2 eggs
- 1 tablespoon vanilla extract
- 1 teaspoon baking soda
- Optional: 1 teaspoon fresh lemon zest
- In a large bowl, mix butter, eggs and sugar together until smooth.
- Mix in the rest of the ingredients gradually and stir gently.
- Spoon cookie dough onto a greased baking sheet and flatten each ball.
- Bake for 10-15 minutes at 350 F.
