Homemade Danish Butter Cookies Recipe

This is a homemade version of the traditional danish butter cookies. While you may find it a bit different, they are very similar. Use splenda for a low carb, more healthy recipe. Could be done with margarine, but not as good.

  • 2 cups unsalted butted, softened
  • 2 1/2 cups sugar
  • 4 cups flour
  • 2 eggs
  • 1 tablespoon vanilla extract
  • 1 teaspoon baking soda
  • Optional: 1 teaspoon fresh lemon zest
  1. In a large bowl, mix butter, eggs and sugar together until smooth.
  2. Mix in the rest of the ingredients gradually and stir gently.
  3. Spoon cookie dough onto a greased baking sheet and flatten each ball.
  4. Bake for 10-15 minutes at 350 F.
