Homemade Oatmeal Butterscotch Cookies Recipe
Delicious oatmeal cookies with butterscotch chips. You may add chocolate chips too for a different taste. Use splenda to replace some of the sugar for a low carb, more healthy recipe.

About 45 cookies
- 1 cup butter, softened
- 1 cup granulated sugar
- 1 cup packed brown sugar
- 1 1/2 cup flour
- 2 eggs
- 3 cups rolled oats
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 2 cups butterscotch chips
- Preheat oven to 350 F
- Mix butter, sugar, vanilla and eggs in a large bowl and stir until smooth.
- Combine the rest of ingredients slowly while constantly stirring.
- Spoon cookie dough balls onto a large baking sheet.
- Bake for 10-12 minutes.
