Homemade Oatmeal Butterscotch Cookies Recipe

Delicious oatmeal cookies with butterscotch chips. You may add chocolate chips too for a different taste. Use splenda to replace some of the sugar for a low carb, more healthy recipe.

  • 1 cup butter, softened
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 1 1/2 cup flour
  • 2 eggs
  • 3 cups rolled oats
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 2 cups butterscotch chips
  1. Preheat oven to 350 F
  2. Mix butter, sugar, vanilla and eggs in a large bowl and stir until smooth.
  3. Combine the rest of ingredients slowly while constantly stirring.
  4. Spoon cookie dough balls onto a large baking sheet.
  5. Bake for 10-12 minutes.
