Homemade Oatmeal Mango Cookies Recipe
Delicious oatmeal cookies filled with mango chunks. USe splenda instead of sugar for a low carb, more healthy recipe. You may replace butter with applesauce or yogurt for a low fat or fat free recipe.

About 25 cookies
- 1 mango, peeled and mashed
- 1 cup packed brown sugar (or splenda)
- 3 tablespoons butter, softened
- 1 egg
- 2 cups rolled oats
- 1 cup flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- Preheat oven to 350 F
- In a large bowl, mix mango with egg, butter, sugar and flour.
- Add the rest of the dry ingredients slowly while stirring constantly.
- Mix the mango into the cookie dough.
- Spoon the cookie mixture onto a baking sheet and bake for 10-15 minutes.
