Homemade Oatmeal Mango Cookies Recipe

Delicious oatmeal cookies filled with mango chunks. USe splenda instead of sugar for a low carb, more healthy recipe. You may replace butter with applesauce or yogurt for a low fat or fat free recipe.

  • 1 mango, peeled and mashed
  • 1 cup packed brown sugar (or splenda)
  • 3 tablespoons butter, softened
  • 1 egg
  • 2 cups rolled oats
  • 1 cup flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  1. Preheat oven to 350 F
  2. In a large bowl, mix mango with egg, butter, sugar and flour.
  3. Add the rest of the dry ingredients slowly while stirring constantly.
  4. Mix the mango into the cookie dough.
  5. Spoon the cookie mixture onto a baking sheet and bake for 10-15 minutes.
