Leek And Parsnip Soup Recipe

A delicious cream soup with parsnip and leek. Replace heavy cream with milk or plain yogurt for a healthier soup. You may add some ginger to change the taste. Enjoy!

  • 4 parsnip, peeled & sliced
  • 3 leeks, sliced (* white part only)
  • 2 3/4 cup vegetable stock
  • 1 potato, diced
  • 2/3 cup white wine
  • 4 tablespoons heavy cream
  • 2 tablespoons butter
  • Salt & Pepper
  • Paprika as garnish
  1. In a large cooking pot, cook the leek slices in butter for 12 minutes over medium heat.
  2. Add the parsnip and cook for 10 more minutes, covered.
  3. Add the rest of the ingredients, except for the cream (and paprika which is for decoration), and cook for 30-40 minutes (covered), until the parsnip is very soft.
  4. Add the cream and process in a blender until smooth. Serve with a dash of paprika.
