Leek And Parsnip Soup Recipe
A delicious cream soup with parsnip and leek. Replace heavy cream with milk or plain yogurt for a healthier soup. You may add some ginger to change the taste. Enjoy!

- 4 parsnip, peeled & sliced
- 3 leeks, sliced (* white part only)
- 2 3/4 cup vegetable stock
- 1 potato, diced
- 2/3 cup white wine
- 4 tablespoons heavy cream
- 2 tablespoons butter
- Salt & Pepper
- Paprika as garnish
- In a large cooking pot, cook the leek slices in butter for 12 minutes over medium heat.
- Add the parsnip and cook for 10 more minutes, covered.
- Add the rest of the ingredients, except for the cream (and paprika which is for decoration), and cook for 30-40 minutes (covered), until the parsnip is very soft.
- Add the cream and process in a blender until smooth. Serve with a dash of paprika.
