Chinese Style Mango Pancakes Recipe

A delicious coconut crepe filled with mango and whipped cream. Perfect to serve either as a breakfast or dessert. Cook this chinese pancake recipe for immediate success!

Crepe recipe:

  • 1 cup flour
  • 3 egg yolks
  • 1/4 cup powdered sugar
  • 1 tablespoon butter
  • 2 cups water
  • 1/4 cup shredded coconut

Filling:

  • 1 cup heavy cream
  • 4 tablespoons sugar
  • 1 mango, peeled and mashed
  1. Combine all the crepe batter ingredients and stir.
  2. In a large frying pan, over medium heat, heat 2 tablespoons olive oil and pour 3-4 tablespoons of crepe batter to make a very thin crepe, flip carefully after 1 minutes and make sure both sides are golden brown. Repeat process for every crepe.
  3. Filling: Whip the cream, adding sugar constantly during the process. Combine the mango and stir.
  4. Spoon some filling in the center of each crepe, roll and serve cold.
