Oyster Rockefeller Soup Recipe

A delicious oyster soup from New Orleans. The recipe has many versions, I found this one to be very good. You could puree in a blender for a smoother texture.

  • 3 cups fresh shucked oysters
  • 2 cups chicken stock
  • 1 1/2 cup heavy cream
  • 3/4 pound spinach leaves (without stems)
  • 2 tablespoons butter
  • 3 garlic cloves, minced
  • 1/4 cup onion, chopped
  • 1 celery stalk, chopped
  • 1/4 cup Pernod
  • Salt & White Pepper to taste
  1. Melt butter in a large saucepan over medium heat. Cook vegetables except spinach for 3 minutes.
  2. Add oysters and chicken stock then cook for 5-6 minutes.
  3. Slowly add the rest of the ingredients and cook for 7-10 minutes, constantly stirring.
