Oyster Rockefeller Soup Recipe
A delicious oyster soup from New Orleans. The recipe has many versions, I found this one to be very good. You could puree in a blender for a smoother texture.

5-6 servings
- 3 cups fresh shucked oysters
- 2 cups chicken stock
- 1 1/2 cup heavy cream
- 3/4 pound spinach leaves (without stems)
- 2 tablespoons butter
- 3 garlic cloves, minced
- 1/4 cup onion, chopped
- 1 celery stalk, chopped
- 1/4 cup Pernod
- Salt & White Pepper to taste
- Melt butter in a large saucepan over medium heat. Cook vegetables except spinach for 3 minutes.
- Add oysters and chicken stock then cook for 5-6 minutes.
- Slowly add the rest of the ingredients and cook for 7-10 minutes, constantly stirring.
