Parsnip And Ginger Soup Recipe

An easy parsnip cream soup with a touch of ginger. You may add light cream or milk to your taste for a creamier recipe. Perfect for a successful elegant dinner.

  • 2 1/2 cups parsnip, peeled & sliced
  • 1 medium carrot, peeled and sliced
  • 1/2 cup onion, chopped
  • 3 garlic cloves
  • 3 tablespoons shredded fresh ginger
  • 3 cups vegetable stock
  • 1 tablespoon butter
  • 1 pear, peeled & sliced
  • Salt & Pepper to taste
  • 2 tablespoons fresh coriander, chopped
  1. Melt butter in a large saucepan over medium heat. Cook vegetables for 6 minutes.
  2. Add the rest of the ingredients and bring to a boil.
  3. Simmer for 25 minutes.
  4. Puree until smooth and serve.
