Parsnip And Ginger Soup Recipe
An easy parsnip cream soup with a touch of ginger. You may add light cream or milk to your taste for a creamier recipe. Perfect for a successful elegant dinner.

- 2 1/2 cups parsnip, peeled & sliced
- 1 medium carrot, peeled and sliced
- 1/2 cup onion, chopped
- 3 garlic cloves
- 3 tablespoons shredded fresh ginger
- 3 cups vegetable stock
- 1 tablespoon butter
- 1 pear, peeled & sliced
- Salt & Pepper to taste
- 2 tablespoons fresh coriander, chopped
- Melt butter in a large saucepan over medium heat. Cook vegetables for 6 minutes.
- Add the rest of the ingredients and bring to a boil.
- Simmer for 25 minutes.
- Puree until smooth and serve.
