Pesto Chicken Salad Recipe
A quick and simple pesto chicken salad perfect for the busy days. Perfect for a side dish or to eat as a complete meal. Add some shredded carrot or raisins for a different recipe. You may replace chicken with shrimps or pork loin.

- 2 sliced chicken breasts
- 1/2 pound cooked pastas
- 5 tablespoons pesto
- 1/2 cup sliced red pepper, cooked 1 min in boiling water
- 1/2 cup black olives
- 1 tablespoon cider vinegar
- 1/4 cup sliced red onion
- 1/4 cup sliced sundried tomatoes
- 1 tablespoon lemon juice
- Salt & Pepper
- Mix ingredients in a large salad bowl.
