Raisin & Cashew Chicken Salad Recipe

An easy & healthy chicken salad with raisins and cashews. For a different recipe add some shredded carrot, apple slices or pineapple chunks. Serve either as an appetizer or a complete meal.

  • 2 sliced chicken breasts, cooked
  • 3/4 cup cashews
  • 1/4 cup raisins
  • 1/4 cup red onion slices
  • 1/4 cup cucumber slices
  • 1 cup pineapple yogurt
  • 1/2 pound cooked white rice
  • 1 tablespoon lemon juice
  • Salt & Pepper
  1. Mix ingredients in a large salad bowl.
