Roast Beef Panini Recipe
A restaurant-style panini sandwich with roast beef, sundried tomatoes and cheddar cheese. You could add spinach leaves and roasted red bell pepper for a different recipe. Serve with a pasta salad!

- 4 paninis
- 1/2 pound sliced roast beef
- 1/2 cup sundried tomatoes, drained
- 4 large leaves romaine lettuce
- mayonnaise
- 8 large slices cheddar (or swiss) cheese
- dijon mustard
- Optional: some sliced pickled banana peppers
- Mount the sandwiches in the following order: bottom bread, spread some mayonnaise, roast beef, lettuce, sundried tomatoes, peppers, cheddar cheese, top bread with some dijon mustard spread on it.
- Slice in half and serve with a greek or pasta salad.
