Roast Beef Panini Recipe

A restaurant-style panini sandwich with roast beef, sundried tomatoes and cheddar cheese. You could add spinach leaves and roasted red bell pepper for a different recipe. Serve with a pasta salad!

  • 4 paninis
  • 1/2 pound sliced roast beef
  • 1/2 cup sundried tomatoes, drained
  • 4 large leaves romaine lettuce
  • mayonnaise
  • 8 large slices cheddar (or swiss) cheese
  • dijon mustard
  • Optional: some sliced pickled banana peppers
  1. Mount the sandwiches in the following order: bottom bread, spread some mayonnaise, roast beef, lettuce, sundried tomatoes, peppers, cheddar cheese, top bread with some dijon mustard spread on it.
  2. Slice in half and serve with a greek or pasta salad.
