Easy Salmon Pot Pie Recipe
A delicious salmon pot pie recipe. Serve this delightful fish pie with a tasty bechamel sauce and mashed potatoes. Use fresh atlantic salmon instead of canned salmon for best results.

- 2 (9 inch) unbaked pie crusts
- 1 tablespoon butter
- 2 (6 ounce) cans salmon, drained and mashed
- 3 cups mashed potatoes
- 1 tablespoon butter
- 1/2 cup onion, chopped
- 1/2 cup red bell pepper, chopped
- 1/2 cup celery, chopped
- 1 can cream of mushroom
- 1 teaspoon salt
- 1 teaspoon pepper
- Preheat oven to 450 F
- Melt butter in a pan, over medium heat, and cook the celery, red bell pepper and onion for 5 minutes
- Mix with the rest of the ingredients in a large bowl
- Pour the mix in your bottom 9 inch pastry
- Cover with the top pastry and pierce top with a knife
- Bake for 10 minutes at 450 F, then reduce heat at 350 and bake for another 20 minutes or until crust is golden brown.
