Shredded Carrot & Pineapple Salad Recipe

A healthy summer salad made of shredded carrot and pineapple chunks. You could add chicken, pork loin or boiled egg for a protein rich recipe. For a different recipe, add some red bell pepper, broccoli or white mushrooms.

No cooking required.

  • 3 cups shredded carrot
  • 1 cup pineapple, drained
  • 2 tablespoons raisins
  • 1/4 cup red onion slices
  • 3/4 cup light mayonnaise
  • 2 tablespoons sour cream
  • 1 tablespoon lemon juice
  1. Mix ingredients in a large salad bowl.
