Spinach Salad With Pine Nuts
A healthy and nutritious salad with spinach and roasted pine nuts. You could replace spinach with romaine salad or use walnuts instead of pine nuts. For a protein rich salad, add a sliced chicken breast or sliced boiled eggs.

- 1 (6-8 ounce) package baby spinach
- 1/2 cup finely sliced red onion
- 1 diced tomato
- 1/2 cup sliced cucumber
- 2-3 tablespoons wine or balsamic vinegar
- 2 tablespoons olive oil
- 2 tablespoons old fashioned or dijon mustard
- 1 tablespoon maple syrup
- 1 cup garlic croutons
- 3-4 tablespoons roasted pine nuts
- Salt & Pepper to taste
- Optional: 1/4 cup grated parmesan cheese
- Mix the ingredients in a large salad bowl.
