Spinach Salad With Pine Nuts

A healthy and nutritious salad with spinach and roasted pine nuts. You could replace spinach with romaine salad or use walnuts instead of pine nuts. For a protein rich salad, add a sliced chicken breast or sliced boiled eggs.

No cooking required.

  • 1 (6-8 ounce) package baby spinach
  • 1/2 cup finely sliced red onion
  • 1 diced tomato
  • 1/2 cup sliced cucumber
  • 2-3 tablespoons wine or balsamic vinegar
  • 2 tablespoons olive oil
  • 2 tablespoons old fashioned or dijon mustard
  • 1 tablespoon maple syrup
  • 1 cup garlic croutons
  • 3-4 tablespoons roasted pine nuts
  • Salt & Pepper to taste
  • Optional: 1/4 cup grated parmesan cheese
  1. Mix the ingredients in a large salad bowl.
