Sugar Free Strawberry Rhubarb Pie Recipe
A healthy and delicious homemade strawberry rhubarb pie recipe. Probably the best strawberry rhubarb pie you will ever bake, and it is low carb!

- 1 double (9 inch) pie crust
- 2 cups diced rhubarb
- 2 cups sliced strawberries
- 1 cup splenda
- 1/2 teaspoon salt
- 2 tablespoons cornstarch (in equal quantity of cold water)
- Preheat oven to 350 degrees F.
- In a large bowl, mix the rhubarb, strawberries, splenda, salt and cornstarch.
- Place bottom pastry in a 9 inch pie plate. Pour the mixture and top with the second pastry. Pierce with a fork in the middle.
- Bake for an hour.
