Sugar Free Strawberry Rhubarb Pie Recipe

A healthy and delicious homemade strawberry rhubarb pie recipe. Probably the best strawberry rhubarb pie you will ever bake, and it is low carb!

  • 1 double (9 inch) pie crust
  • 2 cups diced rhubarb
  • 2 cups sliced strawberries
  • 1 cup splenda
  • 1/2 teaspoon salt
  • 2 tablespoons cornstarch (in equal quantity of cold water)
  1. Preheat oven to 350 degrees F.
  2. In a large bowl, mix the rhubarb, strawberries, splenda, salt and cornstarch.
  3. Place bottom pastry in a 9 inch pie plate. Pour the mixture and top with the second pastry. Pierce with a fork in the middle.
  4. Bake for an hour.
