Toasted Western Omelet Club Sandwich Recipe

A simple and hearty, low carb comboy sandwich made of simple ingredients: eggs, ham, bell peppers, onions. Use whole wheat bread for a healthier version.

  • 4 eggs
  • 1/2 cup green bell pepper, chopped
  • 1/2 cup onion, chopped
  • 3 tablespoons milk
  • 1 cup diced ham
  • 12 toasted and buttered bread slices
  • 1 teaspoon parsley
  • Salt & Pepper to taste
  • 2 tablespoons butter
  • Cheese slices
  • 8 Cooked bacon slices
  • 4 leaves lettuce
  • 4 slices tomato
  1. In a large skillet, over medium heat, sweat the onion and pepper for a couple minutes. Add ham and cook for 2 more minutes.
  2. In a large bowl, beat the eggs with milk, parsley, salt and pepper to taste and pour the mixture over the vegetables in the pan. Cook for 6-10 minutes.
  3. Cut into quarters.
  4. On one slice of toast, place an omelet part, lettuce leave and a slice of cheese, cover with a slice of toast then 2 bacon stripes and a tomato slice. Top with an other slice of toast.
  5. Cut into quarters, repeat process for each sandwich.
