Toasted Western Omelet Club Sandwich Recipe
A simple and hearty, low carb comboy sandwich made of simple ingredients: eggs, ham, bell peppers, onions. Use whole wheat bread for a healthier version.

- 4 eggs
- 1/2 cup green bell pepper, chopped
- 1/2 cup onion, chopped
- 3 tablespoons milk
- 1 cup diced ham
- 12 toasted and buttered bread slices
- 1 teaspoon parsley
- Salt & Pepper to taste
- 2 tablespoons butter
- Cheese slices
- 8 Cooked bacon slices
- 4 leaves lettuce
- 4 slices tomato
- In a large skillet, over medium heat, sweat the onion and pepper for a couple minutes. Add ham and cook for 2 more minutes.
- In a large bowl, beat the eggs with milk, parsley, salt and pepper to taste and pour the mixture over the vegetables in the pan. Cook for 6-10 minutes.
- Cut into quarters.
- On one slice of toast, place an omelet part, lettuce leave and a slice of cheese, cover with a slice of toast then 2 bacon stripes and a tomato slice. Top with an other slice of toast.
- Cut into quarters, repeat process for each sandwich.
