Tom Kha Kai Soup Recipe
A homemade thai chicken coconut soup recipe. This asian style soup is perfect as an appetizer for sushy. Could also be done with sliced pork loin. You can use fresh cilantro leaves to decorate the soup bowls.

6-8 servings
- 3 cups chicken (or fish) bouillon
- 1 1/2 cup cooked chicken breast, chopped
- 3 tablespoons shredded ginger
- 1/2 cup shiitake mushrooms
- 1 can coconut milk (low calorie)
- 2 tablespoons lime juice
- 3 tablespoons brown sugar
- 1 tablespoon fish sauce
- 4 teaspoons chile paste
- Combine broth, coconut milk and ginger in a cooking pot and bring to a boil.
- Add the rest of the ingredients and simmer for 2-3 minutes.
